    This is a classic Italian style loaf of generous proportions. Our most popular loaf is a great tasting, rustic and nourishing bread.

    Years of experience have enabled us to produce a true sourdough of a much lighter style then most. This is a full flavoured family loaf enhanced by slow fermentation and the addition of some stoneground wholegrain flour. Baked on the stone hearth, this loaf has a delectable moist crumb and tasty caramelised crust.

      This is a predominantly white loaf, enhanced in flavour and nutrition by the addition of some stoneground wholegrain flour.

      It is shaped from two pieces of naturally leavened dough baked alongside each other in a tin. The halves can be pulled apart to expose the moist, cottony and lacelike crumb. The Hightop is toaster friendly and ideal for sandwiches due to its soft velvety interior and light tasty crisp crust.

        The rye flavour is at the fore in this loaf capturing the essence of Northern European baking heritage. This loaf has a moist dense cakey interior and a sublime caramelised crust.

        As a coastal bakery, established and operated by a surfing family, we have long been inspired to incorporate the flavours of the ocean into a loaf of ZBS bread. Nori sea vegetable is an excellent nutritional addition being a powerhouse of essential minerals and trace elements. The sweet and subtle flavour of millet is blended with earthy wholewheat stoneground flour and roasted buckwheat kernels. Extended long fermentation assists in the marination of the nori and grains.

          We have sourced fantastic pure un-adulterated dried fruits including un-sulphured apricots to produce this loaf, featuring the pulp of whole oranges and the lovely grainy flavours imparted by the addition of wholemeal and stoneground wholegrain flours. 

          The plumped fruits, citrus and the best Ayurvedic quality cinnamon combine in a balanced hearty loaf, which eats superbly fresh but also toasts wonderfully for days on end.

          It takes years of fermentation experience and skill to create a light open rustic Ciabatta range, such as ours, without resorting to bakers yeast. Extra virgin olive oil and the slow leavening produces a far more flavoursome Ciabatta roll than usual.

          The low flat profile of these rolls allows them to reheat very quickly to serve warm if that is desired. They toast magnificently.
