    We have been on a long journey to source only the best Certified Organic Gluten-Free flours that combine to perfect a loaf that delivers both on excellent flavour and on wholegrain nutritional value. Furthermore this loaf is fully naturally leavened. 

    Sourdough fermentation acts as a form of pre-digestion transforming the ingredients and producing bread full of nutrients and minerals more easily absorbed by our digestive systems.

    We are proud to have created a loaf that by EU and USA standards meets their Gluten Free classification of less than 20 parts per million. 

     

    The loaf is free from: dairy, baker’s yeast, potato starch, xanthan & guar gums, preservatives, sugar and egg.

    A traditional Schwarzbrot wholegrain bread combining stoneground whole rye flour, Biodynamic spelt flour and freshly sprouted Biodynamic rye grain.

    This is a loaf a German army could march on; rich; cakey and ultra-nourishing. We employ an extended cold fermentation to produce this very credible representation of a traditional German loaf. Best sliced thin, toast it or savour as an open sandwich with pickles and smoked fish etc. Think Smorrenbrod.

    A traditional sourdough Panettone

    Panettone is a celebratory feast day bread-cake dating back to the Roman Empire. Ours aligns with traditional Panettone, free from candied fruits and achieving its lightness from sourdough leavening—a long and slow rise—rather than yeast. 


    Remarkably difficult to achieve, this method of crafting Panettone relies heavily on the skills of our artisan bakers. 

    It is well balanced: subtly sweet with plump sultanas, rich with butter and eggs, and a delicate tang that comes from natural leavening and fresh citrus rind. 

    To store, wrap well and keep in an airtight container. Over a longer period, it will eventually dry out but can still make great eating; bring your Panettone back to freshness by heating in a low oven at 100˚C until warm or lightly toasting.

      When will my order be shipped?

      We bake to order!

      To avoid your order idling in transit, orders containing fresh bread are shipped on Mondays only. Orders must be placed by 2pm the Friday prior.

      This means that if place your order over the weekend, the next available day to ship your order will not be the Monday coming, but the one following.

      If you have special delivery due-date requirements, please leave us a note when placing your order.

       

      ZBS Pizza Bases

      Pure and simple, our bases are made from best quality Certified Organic and Biodynamic ingredients.

       

      Natural leavening imparts a subtle sourness that is well balanced by the addition of Grampians extra virgin olive oil, making for a moreish base that is delightfully simple to prepare. 

       

      To prepare, baste with good quality olive oil and a thin covering of passata, top with desired seasonal ingredients, finishing with fresh mozzarella or parmesan—or both. Bake in a 220 degree oven for 7 to 10 minutes, just before the toppings begin to brown. 

       

      Vacuum packaged for freshness, our bases keep for 4 days or more from the baked-on date. Keep longer by storing in the fridge.
