    Autumn brings cool misty mornings, the full moon and big ocean swells to Torquay. Around Easter the wonderful welcome spicy aroma of Easter buns baking fills the bakery again. Our buns are made slowly and simply, the old pre-industrial way without resorting to sugar or baker's yeast.

    ZBS Easter buns are a delectable combination of plumped dried fruits, fresh citrus peel and our unique bakery-roasted blend of fragrant spices.

The sesame seed coating provides additional roasted nutty complexity to the crust. The Light Wholemeal makes wholesome sandwiches but also toasts magnificently.

        We have been on a long journey to source only the best Certified Organic Gluten-Free flours that combine to perfect a loaf that delivers both on excellent flavour and on wholegrain nutritional value. Furthermore this loaf is fully naturally leavened. 

        Sourdough fermentation acts as a form of pre-digestion transforming the ingredients and producing bread full of nutrients and minerals more easily absorbed by our digestive systems.

        We are proud to have created a loaf that by EU and USA standards meets their Gluten Free classification of less than 20 parts per million. 

         

        The loaf is free from: dairy, baker’s yeast, potato starch, xanthan & guar gums, preservatives, sugar and egg.

        This is a loaf a German army could march on; rich; cakey and ultra-nourishing. We employ an extended cold fermentation to produce this very credible representation of a traditional German loaf. Best sliced thin, toast it or savour as an open sandwich with pickles and smoked fish etc. Think Smorrenbrod.

        This is a well-made sourdough version of the French classic. The ZBS Baguette has a caramelised crust but a surprisingly moist crumb. Its flavour is enhanced by natural leavening and the addition of some stoneground wholegrain flour. 

        It is an ideal accompaniment to a shared meal or antipasto. This loaf can be refreshed in a hot oven in a few minutes for a crunchy warm table bread.
