We are particularly proud of our achievement with our brioche range, which is light and airy, but completely naturally leavened without resorting to commercial yeast.
We also think that we have achieved just the right balance of egg, butter, sweetness and sourdough tang. Slow fermentation adds a special complexity of flavour and enhances its keep-ability.
